It’s hearty without being heavy, and the lemony finish gives it that little something that makes each spoonful feel special.
What really takes this soup to the next level is the subtle depth of flavor from the white miso and Dijon mustard. They don’t overpower the dish, but instead quietly enhance the broth with a delicious savoriness. LEMON, CHICKEN & ORZO SOUP

INGREDIENTS
3 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
1 ½ tbsp white miso
1 tbsp Dijon
3 tbsp flour
8 cups chicken broth
2 chicken breasts
1 cup orzo
2 cups arugula
2 lemons, zested and juiced
Salt and pepper, to taste
METHOD
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and sauté for 3–5 minutes, until softened and translucent. Stir in the garlic, white miso, and Dijon mustard, and cook for another 1–2 minutes, stirring constantly to prevent sticking.
Sprinkle in the flour and stir well to coat the onion mixture. Cook for about 2 minutes to remove the raw flour taste.
Slowly whisk in the chicken broth, adding it gradually and whisking constantly to keep the soup smooth and lump-free.
5. Add the chicken breasts to the pot and bring the soup to a gentle boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the chicken is fully cooked and tender.
Remove the chicken breasts from the pot and set aside. Bring the soup back to a boil, then stir in the orzo. Cook for 7–9 minutes, stirring occasionally, until the orzo is al dente. While the orzo cooks, shred the chicken using two forks.
Once the orzo is cooked, turn off the heat. Stir the shredded chicken back into the pot along with the arugula, lemon zest, and lemon juice. Season with salt and pepper to taste.
Serve warm and enjoy right away.

Keep in mind that the orzo will continue to absorb liquid as it sits, so the soup may thicken over time. When reheating, simply add a splash of chicken broth or water to loosen it up and warm gently on the stovetop or in the microwave.
If you plan to freeze it, you may want to do so before adding the orzo and arugula for best texture. Freeze the broth and chicken for up to 2 months, then reheat and add freshly cooked orzo and arugula just before serving.
